Classic Cheesecake Recipe
Ingredients
For the crust:
- 200 g graham crackers or digestive biscuits, crushed
- 100 g unsalted butter, melted
- 2 tbsp sugar
For the filling:
- 900 g cream cheese, softened
- 200 g sugar
- 4 large eggs
- 250 ml sour cream (or Greek yogurt)
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional)
Instructions
- Preheat oven to 175°C (350°F). Mix crushed biscuits, butter, and sugar. Press into a 23 cm (9 inch) pan and bake for 10 minutes. Cool.
- Beat cream cheese until smooth. Add sugar. Mix in eggs one at a time. Stir in sour cream, vanilla, and lemon juice.
- Pour filling over crust. Bake 55–70 minutes in a water bath until center is slightly jiggly.
- Cool in oven with door open for 1 hour. Refrigerate at least 4 hours or overnight.
- Top with fruit sauce or fresh berries and enjoy!
