Classic Cheesecake Recipe

Classic homemade baked cheesecake with crust

Ingredients

For the crust:

  • 200 g graham crackers or digestive biscuits, crushed
  • 100 g unsalted butter, melted
  • 2 tbsp sugar

For the filling:

  • 900 g cream cheese, softened
  • 200 g sugar
  • 4 large eggs
  • 250 ml sour cream (or Greek yogurt)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Mix crushed biscuits, butter, and sugar. Press into a 23 cm (9 inch) pan and bake for 10 minutes. Cool.
  2. Beat cream cheese until smooth. Add sugar. Mix in eggs one at a time. Stir in sour cream, vanilla, and lemon juice.
  3. Pour filling over crust. Bake 55–70 minutes in a water bath until center is slightly jiggly.
  4. Cool in oven with door open for 1 hour. Refrigerate at least 4 hours or overnight.
  5. Top with fruit sauce or fresh berries and enjoy!
